Exploring the Magic of Whims Brewing: A NJisntBoring Craft Beer Adventure

Located in a cozy and inviting taproom in the heart of Atco, Whims Brewing offers a wide selection of beers that cater to all tastes and preferences. Whether you’re a fan of classic styles like IPAs and stouts, or you’re more interested in trying something completely new and different, Whims Brewing has got you covered.

I got a chance to interview Dorien Saunders, the owner and head brewer at Whims Brewing. Originally a home brewer before working in a professional brewery himself when I asked him what made him want to start a brewery.

He said, “The time spent on the professional side made me really consider jumping into this full-time. My love for the craft has really been my driving factor in everything in the industry. The ability to bring something I love and am passionate about to our town is the perfect marriage of all those ideas.”

Dorien and his wife call Atco home and have lived there for many years being a part of the local community. “We thought it would be great to contribute something to our local area and give people something cool and interesting to do. We came at it with a different style, a cozy lounge-like atmosphere to contribute something unique to the area. The brewery’s name, “Whim’s”, is a play on the fact that we put forth a lot of thought in everything we do, though we rarely discuss it outwardly. So when we actually put a plan into motion it seems like it’s off the cuff.”

Many of the beers you’ll find on tap at Whims Brewing are made with botanicals and locally sourced fruits, but be sure to visit often because their beer list is always evolving.

“We maintain an ever-rotating list of beers and haven’t really settled on flagships. We feel the possibility of a new tap list per visit adds a level of excitement or newness per visit. We do bring back beloved beers and other beers we’ve made with subtle tweaks though as well.”, Dorien told NJIB.

Beers I tried during my visit:
– Grimoire Weiss (Berliner Weiss style ale with white sage and dry hopped with Comet) | 3.8% ABV
– Purgatorio (Gose Sour Ale) | 5.6% ABV

My personal favorite was the “Native Prick”, a Hard Seltzer with Prickly Pear Cactus. Bonus: Its purple-like color matches the bar.

One of the highlights of my visit was getting to chat with Dorien’s father, Lance who was bartending that day. Lance and his fellow “beertenders” love to talk beer, life, and everything else.

Regardless of the day or event, someone can expect a welcoming lowkey environment to share a good beer and conversation with family and friends. They try to keep it relaxing on Sundays with jazzy playlists, host Trivia nights, and feature local musicians.

When asked what made them different than other breweries, Dorien answered, “We come at it with a lot of soul. We care about the product, we care about building relationships, and when we ask how your day is we really do care. Of course, it is a business, but I believe we really come from a place of love with everything we do and what we offer those that come to visit or purchase our products out on shelves.”
