Feasting on Food Trucks at the Spring Food Truck Fiesta
Last Saturday, despite clouds and a stormy forecast, my husband and I ventured to Mercer County Park in West Windsor for the Spring Food Truck Fiesta. The event was hosted by the Surf and Turf Truck, a popular food truck known for their fresh Lobster Rolls, Steak Sandwiches, Shrimp Tacos etc. At this event, 33 food trucks were in attendance, as were local NJ crafts vendors for the first time. The event also featured activities for the kids, live music, a petting zoo, and dog were allowed to come!
There were SO many NJ/PA/NY food trucks to choose from at this event. These food trucks were Ahh la Cart, Amanda Bananas, BrazBQ, Buzzetta’s, Carlitos Taco Wagon, Cheezen, Crespellas, Cow and the Curd, Cupcake Carnivale, Dump and Roll, El Lechon de Negron, Empanada Guy, Five Sisters Catering, Gigi’s and Big R, Kona Ice NJ, Lexilicious, Lost in the Woods, Luscious Bakery, Ms. Fu’s Yummy Truck, My Four Sons, Oink and Moo BBQ, The Outslider, PB and U, Pizza Wagon, Pompier Catering, Surf and Turf Truck, The Taco Truck, The Tot Cart, Try Vegan, Undrgrnd Donuts, Waffle de Lys, Whirly Pig, Wild Bill’s Soda, and WTF Food Truck.
Basically anything you were craving for lunch or a snack was there. Since April is National Grilled Cheese Day, I knew my first stop would be Cheezen, a grilled cheese food truck from Red Bank. I got the “Trio” which was Gruyere, Sharp Cheddar, and Fontina Cheese with Bacon and garlic tomato aioli on sourdough. Mmm….so good. I split the grilled cheese with my husband so I would have a chance to eat some other food at the event.
There was so much different food represented at the event. You could grab some tasty tater tots at the Tot Cart, try some cheese curds at the Cow and the Curd, grab tacos at Carlito’s Taco Wagon or the Taco Truck, sliders at the Outslider, BBQ at Oink and Moo or Whirly Pig, pizza from the Pizza Wagon, exotic game meat from Lost in the Woods, specific peanut butter food items at PB and U, and even purchase vegan food at Try Vegan.
There were lots of trucks representing culturally diverse food including Empanadas from Empanada Guy, Pierogis from Pompier Catering, Asian home cooking from Ms. Fu’s Yummy Food Truck, Brazillian BBQ from BrazBQ, Puerto Rican Cuisine from El Lechon de Negron, Carribean Soul Food from GiGi and Big R, and dumplings and spring rolls from Dump N Roll.

I ended up at the WTF Food Truck, who had amazing comfort food. Inspired by my recent trip to New Orleans, I got a Shrimp Po Boy. SO good….and so filling.

Sweet food trucks (like Undrgrnd Donuts, Amandas Bananas, Waffle de Lys, Lexilicious, Kona Ice NJ, Crespellas, Luscious Bakery, and Cupcake Carnivale) were well represented at the Spring Food Truck Fiesta. Before I left, I got FOUR cupcakes to go from Cupcake Carnivale, a food truck specializing in Gourmet, made from scratch cupcakes.
These cupcakes were Chocolate Chip Cookie Dough, Chocolate Caramel-Chai, Fruit Pebbles, and Red Velvet Oreo Cookies and Cream. They also had pupcakes for the dogs, which I saw a few dogs enjoy. Here is a list of other amazing cupcakes that they offer.
After I enjoyed eating, I walked around the craft show to check out the local vendors. The craft show had a lot of different vendors with homemade goods. I enjoyed speaking to Junk Drawer Collective who makes cutting boards, bottle openers, candle holders, felted & crochet animals & plants. They had a NJ shaped flight that I was in love with.
I also loved the petting zoo! I got to pet so many animals, including my new llama friend.
I also want to mention Love, Annaleigh, a charity support for Critically Ill Newborns, that was represented at the Spring Food Truck Fiesta. The $5 admission the festival went towards different charities which I really respect.
Despite the morning gloominess, the weather did eventually clear and it ended up being a beautiful day for a food truck festival! The weather did not deter anyone from going regardless, which says a lot about the event.
Overall, I had a lot of fun at the Spring Food Truck Fiesta, and look forward to their event in the Fall!
