Enjoying Taco Tuesday at the Taco Truck!

It only made sense that on Taco Tuesday I would head to The Taco Truck, a restaurant that started as a New Jersey food truck serving Mexican street food in 2009. Now, in addition to food trucks, The Taco Truck has 3 physical locations (so far) in New Jersey. I headed to their Princeton location to try out their amazing food.

The Taco Truck focuses on high quality ingredients and unique recipes while making their tacos, tortas, burritos, and sides like street corn and guacamole. They make everything from scratch with no exceptions! They may not be a “fast food” restaurant, but you get your food quickly and it’s made to order!

The Taco Truck is dedicated to keeping things local. If you’re looking for soda, you can order Puck’s fountain soda, a local soda company out of Hoboken that uses real sugar and nothing artificial (their black cherry soda is amazing). I also highly recommend drinking one of the Taco Truck’s “Aguas Fresca”. They were offering a strawberry and mango option when I was there (I went with strawberry).  Bonus: Their cups are made from plants!

The Taco Truck features many different kinds of tacos. My husband’s favorite was the BARBACOA taco, made with braised beef, onion, cilantro, and roasted red salsa.

Their AL PASTOR taco seems to be a very popular choice, it’s made with marinated pork, onion, cilantro, pineapple, and fresh green salsa.

I loved everything I ate there, but I was partial to tacos on their “Tacos Especial” menu. I’m a big avocado fan, so I loved the AGUACATE tacos, a vegetarian option made with crispy avocado, black beans, sesame seeds, pickled onion, tortillas fritas, and chipotle salsa.

My personal favorite taco (although it’s hard to pick a favorite when everything is so good) was the PESCADO taco made with crispy catfish, red cabbage, pico de gallo, tartar, and chipotle salsa.

This month they have a cool special, their Peanut Mole Taco and Peanut Mole Burrito. The sweet & savory Peanut Mole sauce is paired with their Barbacoa (braised beef) in both the taco and burrito (it can also be put on their vegetarian options as well). They have different specials every month, so be sure to visit often!

If you’re looking for a side to pair with your tacos, you can’t go wrong with their Mexican Street Corn!

In addition to tacos, they also have Tortas, a toasted Mexican sandwich which they serve with white onion, pickled jalapeno, avocado, crema, and black beans. I tried their BERENJENA (crispy eggplant), which is kind of like a Mexican eggplant parm. Very, very good.

The Taco Truck also serves quesadillas. Pictured here:QUESADILLA LAS GRINGAS (marinated pork, queso, pineapple, fresh green salsa).

And really, really good burritos. All burritos are made with red rice, black beans, crema in a flour tortilla.  We shared the POLLO burrito, grilled chicken, lime-pickled onion, and roasted red salsa.

IF you still have room for dessert, the Taco Truck makes AMAZING churros. If you’re full, you should order them to go!

The Taco Truck keeps to four central principles – authenticity, hospitality, sustainability, and community. By visiting one of their locations, carts, or food trucks you’ll see it for yourself! And if you’re like me…you’ll be taking home leftovers!
